A standard, traditional sack mead will be 3 pounds per gallon, a sweet dessert mead you will go for 4 pounds. Distillate obtained in this manner has a higher alcohol concentration (approximately 90% ABV) and is less aromatic. Pour this liquid into old wine bottles and cork them. Selling of home distilled alcohol is an offence in most countries as well and penalties apply. I can definitely understand how some if seems pretty strange.

I doubled checked the yeast part as it troubled me for some time. Production of coconut wine has indeed contributed to the endangered status of some palm species such as the Chilean wine palm (Jubaea chilensis). In the meantime, the colonists improvised a beer made from red and black spruce twigs boiled in water, as well as a ginger beer. The rest of the mash usually contains barley & rye.

Most grocery stores have unfiltered, no chemicals added, pasteurized cider (typically in a milk jug in the produce section), that can be fermented by pouring it into a sanitized container and adding yeast (a slow, cool ferment with Lavlin's K1V-1116 wine yeast makes excellent cider- adding a an ounce or two of French oak shavings (per 5 gallons) to the ferment also helps with the complexity- the cold ferment is needed to preserve the aroma.). This process purifies it and removes diluting components like water, for the purpose of increasing its proportion of alcohol content (commonly expressed as alcohol by volume, ABV ). [1] As distilled beverages contain more alcohol, they are considered "harder" – in North America, the term hard liquor is used to distinguish distilled beverages from undistilled ones.

Apple, grape, mango, pineapple, pear, and berry juices work beautifully. The easiest way is siphon to so you can get the liquid out without disturbing the dregs sediment and without having to move the fermenting container at all; A good rule of thumb is you get out up to 1/4 inch above where the dregs start; to be safe, I take out no more than 1/2 inch above (let small the remainder go at the bottom of the container, it is not worth getting sick over) Don’t take chances with pressurized gas and glass containers that weren’t designed for pressure, even if you think the fermentation is complete.
